Chung Jung One ferments its Gochujang the traditional way - in large Hanggari pots. The paste undergoes two stages of fermentation and is left out in open air - on sunny days - to develop a rich, piquant flavor. If you're new to Korean cooking, start with this product.

This gochujang is very smooth, and not extremely hot. As someone who's less tolerant of spicy-hot foods than most people, I like being able to make my own sauces so I can adjust the heat. Chun Jung One lets me do that, while adding a nice dimension of flavor.

What is Gochujang?
Gochujang is a fermented paste that's used in many spicy Korean dishes. It's made with Korean red chili peppers (Taeyang Peppers, shown left). These peppers are picked, dried and grated into tiny flakes. Then, these flakes are mixed with various ingredients including fermented soy bean powder (meju-powder), rice flour and salt. The paste is fermented for many months to develop a deep, piquant flavor.
