[Gaeul Hyanggi] Organic Soup Soy Sauce
Gaeul Hyanggi's Soup Soy Sauce is made by an artisan from Yangpyeong (Gyeonggi-do province).
The artisan - Park Ae Kyung - introduced organic, sustainable farming practices to her local village in 1997. She started by cultivating rice and soybeans without any chemical pesticides. With the leftover soybean yield, Park began to experiment the art of traditional soy sauce and doenjang making. After 19 years, her brand has gained a large following in Korea and even sell as premium traditional goods in Korean department stores!
Gaeul Hyanggi's Soup Soy Sauce is made with 100% Korea-grown, organic soybeans. The soybeans are mashed into meju bricks and left to ferment for 6 months. After the Soy Sauce is extracted, its left to age for another full year to develop a rich, full-bodied flavor.
So what does it taste like? This Soup Soy Sauce is saltier than normal soy sauce and has a very clean aftertaste. It's perfect for Korean soups or stews as it seasons without altering the natural flavor of the broth.

1. Korean Organic-Certified Soybeans are boiled in large iron cauldrons. The cooked beans are then mashed and molded into bricks (meju)
2. Once the bricks turn firm, they are left to dry on rice straws for 3 weeks - this is when healthy bacterias develop and the fermentation process begins.
3. The meju bricks are now ready to be stacked and stored in large Hanggari pots - along with sea salt - to ferment again and produce natural Soy Sauce.
