Today, we introduce a gochugaru that checks all the boxes:

This gochugaru is made by Haedam, owned by the married couple Jeong Chang-dong and Lee Hae-Seon. They returned to farming in Yeongyang in 2004 to produce organic chili peppers.
The chili peppers are certified organic (farm number #16100465 by Woori Agricultural Certification Center).
What is organic farming?
Organic farming avoids the use of chemical fertilizers, pesticides, or herbicides. Instead, it relies on organic matter, beneficial microorganisms, and natural oils to cultivate chili peppers.
These chilies are grown at the end of Geummarae Valley in Ilwol-myeon, Yeongyang-gun, Gyeongbuk. The significant temperature difference between day and night thickens the pepper skin, enhances sweetness, and gives it a beautiful red color.
To preserve their natural spicy flavor and deep-red color, the peppers are dried at low temperatures for over 4-5 days, rather than using an industrial dryer. This method maintains the natural color, aroma, and taste of the chili peppers.

We are Jung Chan-dong and Lee Hae-sun, producing organic peppers in Yeongyang, Gyeongbuk since 2004.
In the midst of the influx of imported agricultural products, we aim to produce safe agricultural products that our family and children can eat!
We are dedicated to organic farming (certified organic farm number #16100465 by Woori Agricultural Certification Center).
Organic farming means not using chemical fertilizers, pesticides, or manufactured substances.
Instead, it's grown using natural materials like organic matter, microorganisms, and natural minerals.

Made solely with chili peppers grown locally in Korea (Yeongyang-gun 영양)
Our chili farm is located at the very end of Geummarae Valley in Ilwol-myeon, Yeongyang-gun, Gyeongbuk.
This area has soil and climate conditions that are very suitable for growing chili peppers.
The large temperature difference between day and night makes the pepper skin thick, enhances sweetness, and gives it a very beautiful red color.
The chili peppers are harvested by hand.
We harvest only well-ripened chili peppers.
Once harvested, the peppers do not require any further ripening.
We harvest the ripe peppers and clean them thoroughly by hand twice and once with a machine.
After washing, we dry them at a low-temperature of around 50°C.
Due to the low-temperature drying, it takes about 4-5 days to dry the peppers.
(Typically, when people refer to steaming the peppers, they will raise the dryer temperature to above 60°C)
With low-temperature drying, the natural color, aroma, and taste of the peppers are preserved.

Many producers cut the stems just below the green part to prevent the seeds from spilling out (see image on right).
However, we remove the green stem portion completely to achieve the smoothest flavor (see image on left)!
