This cutting board is crafted from a whole slab of maple wood, which is softer on knife blades compared to harder woods, bamboo, or plastic. While maple is technically classified as a hardwood, it’s soft enough to prevent excessive wear on your knives.

An additional advantage of maple is its small pores, which reduce the absorption of food liquids and detergents—both of which can lead to bacteria growth over time.

Chilmong elevates this board by applying six layers of Korean Ottchil lacquer.

Ottchil, a natural sap harvested from Korean Ott trees, has been used for centuries to finish wood in both art and kitchenware. When properly applied and dried, it creates a 99.9% antibacterial surface—making it an ideal material for a cutting board!

What sets Chilmong’s Ottchil lacquer apart is its high urushiol content. Urushiol is the compound responsible for the lacquer's durability, resulting in a thicker, more resilient coating with enhanced gloss and clarity. It also provides superior resistance to heat, water, insects, and corrosion, ensuring long-lasting protection and durability.

Is the Cutting Board You Use Every Day Really Safe?

Cutting boards, especially wooden ones, come into contact with various ingredients like vegetables, meat, and fish, which expose them to bacteria. That’s why it’s important to clean and maintain them properly.

In the case of wooden cutting boards, washing them with warm water initially can remove 75% of bacteria, and air-drying them for two days can reduce bacterial levels by an additional 5%. However, after using the board for more than a year, some reports suggest that the number of bacteria may triple.

Dr. Charles Gerba, a microbiologist at the University of Arizona, conducted research over a decade ago and discovered that bacteria tend to cling to scratches on plastic cutting boards and the porous surface of wooden boards. In particular, bacteria can become trapped inside the wooden fibers, making it harder to remove them even with cleaning.

Additionally, some wooden cutting boards are finished with drying oils, like linseed or tung oil, which can lead to peeling or coating detachment if the temperature is too low, causing uneven drying.

NON-TOXIC: Maple trees are used for making maple syrup - not toxic to humans

HARD SURFACE: Maple trees are known for having the ideal hardness, making them solid and suitable for reducing hand fatigue when handling a knife. 

Take a look at the cross-sections of four various woods -  (Camphor, Teak, Walnut, Zelkova). Large pores in the wood can cause the cutting board to absorb food liquids and dish detergent, making it less hygienic and leading to bacteria growth over time.

The durability of the lacquer coating depends on urushiol, not from other resins like laccol or thitsi, which is often used in art ottchil pieces. Chilmong uses premium native lacquer with a high urushiol content, blending it with lacquer from other regions and applying it more than six times for superior results.
