This is so very convenient and delicious. I made kimchi fried rice for the first time, it was too easy and simply enjoyable. One can was good for one serving.It is an expensive product, I trust the quality. This was a treat.

Fresh vs. Aged Kimchi

There's two types of Koreans - those that prefer Fresh Kimchi and those that prefer Aged Kimchi! Fresh Kimchi has bold flavors and a crunchy texture. You'll taste the spicy, smoky heat from the gochugaru, the garlick-y kick and the crisp snap of the cabbage leaves. But as Kimchi ferments over days and weeks, it begins to develop a more tangy, slighty-sour taste (similar to Sauerkraut). The natural water inside the cabbage seeps out and creates a pool of kimchi liquid - which is amazing to cook with. This tangy funk transforms into deep, layered flavor when cooked in broths or stir-fried with oil.
