Depending on the type of nectar, honey can taste floral, fruity, nutty, earthy and even spicy! Today, we introduce two premium honeys harvested in Jirisan Mountain: Snowbell and Chestnut Honey. As the name states, the nectar is derived from the flowers of the Snowbell and Chestnut Tree. These two trees blossom for only two months - during May and June. The Jirisan bees get busy and create a limited supply of delicious honey every year, which is then masterfully extracted by beehive master Kim Il Kwon.
So what do these honeys taste like? The honey from the Snowbell tree has a balanced sweetness - not overly sweet. It also has a slight floral note that pairs nicely with breakfast foods like cheese, greek yogurt and fruit. The chestnut honey is much darker in color - and the flavor is more robust. It isn’t as sweet as the Snowbell but has an aftertaste of chestnuts! A unique, local flavor that works beautifully with morning toast and baked goods.
Natural pure honey is filled with mineral and vitamins. But there are many large brands that “water-down” honey with artificial sweeteners like sugar to lower prices. In Korea, producers label their honey with a carbon isotope ratio score. This indicates the pureness of the honey. All-natural honey has a score that ranges low, from -23.5% ~ -33% (the lower the better). Sugar, for reference, has a score in the high -10% ~ -20%.
Both of the Jirisan honeys have a score of -23.5% - indicating a pure, all-natural honey.

Every year, during May and June, Snowbell Trees in Mt Jirisan begin to blossom. The nectar from this flower tastes sweet - but not overly sweet - with a hint of floral aftertaste.
Drizzle this honey over fruit and yogurt or use it as a substitute for sugar in Korean recipes.
2. Jirisan Chestnut Honey

Brief description
Chestnut Trees also blossom during May and June. Nicknamed "Medicine Honey" by locals, this Chestnut honey is packed with vitamins - especially Potassium and Iron.
In terms of taste, it is not as sweet or floral like the Snowbell honey. Instead, it has a muted sweetness with a slight chestnut aftertaste!
We think it's great spreading over morning toast or baked goods!
