Crafted by the family of Master Kim Ku Won, whose tofu-making tradition dates back to 1938, this artisan doenjang reflects nearly a century of dedication to Korean soybean craftsmanship. Over four generations, the Kim Ku Won workshop has built its reputation on careful ingredient selection, traditional techniques, and patience—values that carry through to their fermented soybean paste.

This doenjang is made using Jangdan soybeans (장단콩) grown in Paju, a region known for its clean natural environment and exceptional soybean quality. These prized Korean soybeans have long been regarded as some of the finest in the country for making tofu and fermented soybean products.

The paste is naturally fermented without additives, allowing the pure flavor of soybeans and sea salt to develop slowly over time. Aging takes place in traditional onggi (earthenware jars), where natural airflow and seasonal temperature changes help the fermentation deepen and mature.

The result is a richly savory soybean paste with the warm, nutty depth Koreans call 구수한맛 (goosuhan-mat)—a deep, comforting umami that defines excellent doenjang.

The Kim Ku Won workshop traces its origins back to 1938, when Master Kim Ku Won began producing tofu using traditional Korean methods.
