Crush a handful of freshly toasted perilla seeds, and their aroma immediately fills the room—warm, deeply nutty, and unmistakably Korean. Ground perilla is stirred into hearty soups, sprinkled over seasoned vegetables, and used to give dishes like gamjatang their signature richness.
But perilla seeds offer more than flavor. Their natural oil is one of the richest plant-based sources of omega-3 fatty acids—particularly alpha-linolenic acid, or ALA. In fact, perilla oil typically contains a higher proportion of omega-3 than other commonly consumed plant oils, including flaxseed, soybean, sesame, and grapeseed oils.
The problem is that omega-3 is sensitive to heat, light, and oxidation. Once perilla seeds are roasted or ground, their fragrant oils are exposed and freshness begins to fade.
That is precisely why these seeds are left completely raw.
Raw from the Beginning
These organic perilla seeds are grown in Korea and are never roasted, steamed, or heat-treated.
After harvesting, they are carefully washed 10 times to remove dirt and small field debris. Instead of being exposed to heat for faster processing, the clean seeds are slowly dried in cold air for 48 hours.
The result is perilla in its purest form: whole, raw seeds with their naturally occurring oils protected inside until you are ready to use them.
Why Raw Perilla Seeds?
Buying pre-roasted seeds or ready-ground perilla powder may be convenient, but oxidation begins as soon as the seeds are ground and their oils are exposed to air. Over time, the aroma becomes weaker and the delicate fats begin to deteriorate.

For traditional Korean cooking, lightly toast the seeds in a dry pan over low heat, stirring continuously until they become fragrant. Let them cool completely before grinding. Freshly toasted perilla has a fuller, more aromatic flavor than powder that has been sitting in a package for months.
