Natural Fermentation via meju Blocks
Organic Korea-grown soybeans are carefully washed, then boiled and mashed into blocks (meju), which are left to naturally ferment and dry over several months.
During this slow fermentation, naturally occurring microorganisms break down the soybeans' proteins and starches into amino acids and other flavor compounds, creating the rich umami taste that defines traditional Korean jang.
High-quality meju, made from only soybeans and natural sea salt, is the key to producing authentic, deeply flavorful fermented pastes without artificial additives or preservatives.

Fermented foods are the foundation of Korean cuisine and an essential part of every Korean table. Since our founding in 2009, we have remained committed to producing authentic fermented foods the traditional way.
To preserve these time-honored methods, we traveled across Korea in search of traditional breathing earthenware jars and skilled artisans. Today, we care for over 5,000 traditional fermentation jars across a 30,000-pyeong (approximately 99,000 m²) fermentation site and clean forest environment.
