Naturally Sun-Dried in Yeongyang, Korea
[Haetnim Maeul] 100% Sun-Dried Taeyang Gochugaru (Great for Kimchi)
- 100% Korea-grown
- Sun-dried peppers
- Medium heat
- Coarse for kimchi
Haetnim Maeul Taeyang Gochugaru (햇님마을 태양초 고춧가루) is made with 100% Korea-grown red chili peppers.
Koreans prefer domestic gochugaru, because many of the big Korean food companies import lower-grade peppers from China to keep prices low. Haetnim Maeul is a regional producer that prides itself on using only Korea-grown peppers.
The chilis are grown in Yeongyang, a mountainous rural county in North Gyeongsang Province that gets plenty of sunshine all year. There, the peppers grow firm and plump.
After harvest, they are dried naturally in the sun instead of in an industrial dehydrator. Gochugaru dried this way is labeled "Taeyang Gochugaru" (sun-dried gochugaru).
Taeyang gochugaru sells at a premium, because the chili develops a deeper, spicier flavor when it dries naturally in the sun.
It has a coarse texture, a dark red color and a medium heat. That coarse texture is especially good for kimchi: it clings to the cabbage leaves and doesn't slip off when you coat them.
Of course, it works just as well for spicing up any other Korean home cooking.

Haetnim Maeul (Village) 🌶️
From our land, nurtured by our nature — we deliver the taste of nature just as it is.
Gochugaru (Korean chili flakes) has a place on every Korean table. Haetnim Maeul's aim is simple: food made with the care of a mother's cooking, for today's families. Their guiding rule is to keep “the best of the best,” always.
This Taeyang gochugaru is made only from chili peppers grown in Yeongyang, North Gyeongsang, and dried naturally in the sun. That gives it a deep flavor, a natural aroma and a vibrant red color that carries straight into your kimchi, stews, soups and stir-fries.
It's made under HACCP food-safety standards and certified as a Korean Traditional Food.

Yeongyang Chili Powder: Rich in Spice and Sweetness
Yeongyang's fertile soil and wide swings between day and night temperatures make it ideal for growing chili peppers. Its signature variety, Subicho, is known across Korea for its quality.
Research by Korea's Rural Development Administration found Subicho peppers carry more sugar and vitamins than the national average and less fiber, which gives them a naturally sweet flavor. Kimchi made with them tastes richer and looks more vivid.
Haetnim Maeul uses only Yeongyang-grown, sun-ripened peppers for a balance of heat and sweetness.
Since 1999 they have bought dried peppers directly from trusted local farmers, each with its own washing facility. The peppers are cleaned, de-seeded and sanitized with care, then milled in a HACCP-certified facility.

Sunlight, No Dehydrators: The True Taste of Korea
After harvest, the peppers are dried naturally in the sun, not in industrial dehydrators. This slow method keeps their deep flavor, natural aroma and vibrant red color.
Spice level: medium heat 🌶️🌶️🌶️ (3 out of 5).
Coarseness: coarse (on a scale of ultra fine, fine, coarse, extra coarse). This grind is the one used for kimchi, radish kimchi (kkakdugi), seasoned side dishes, stir-fries, soups, stews and braised dishes.

Why Yeongyang Chili Peppers?
Yeongyang is a mountainous county in North Gyeongsang Province, in southeastern Korea, known for its clean air and unspoiled nature.
Big daily temperature swings and plenty of sunshine produce peppers with a deep, vivid red color and exceptional flavor and aroma.

Why Does Yeongyang Chili Powder Taste a Little Sweet? 🌶️
During the day, the peppers soak up nutrients. When the temperature drops sharply at night, they burn stored energy to get through the cold.
That cycle repeats all season, building up nutrients and natural sugar. The result is a sweetness up front followed by a lingering heat, the same reason mountain-grown fruit and vegetables taste richer.
