[Jirisan Hanbong] Cherry Blossom Honey (400g)
Many people assume honey is just 'sweet' - but it's so much more.
Depending on the type of nectar, honey can taste floral, fruity, nutty, earthy and even spicy!
Today, we introduce a premium honey harvested in Jirisan Mountain: Cherry Blossom Honey
As the name indicates, the nectar is derived from Cherry Blossom trees. Cherry blossoms bloom for a very short period - typically for only 1 month, from late-March to early-April.
Honeybees get busy and create a very limited supply of this delicious honey every year, which is then masterfully extracted by beehive master Kim Il Kwon. It's only produced in small batches every year.
So what does this honey taste like? Cherry Blossom Honey has a balanced sweetness, with a fruity and slightly floral note.
It pairs wonderfully with breakfast foods like cheese, greek yogurt and fruit.
Natural pure honey is filled with mineral and vitamins. But many large food brands “water-down” their honey with artificial sweeteners like sugar - to get more yield and lower prices.
In Korea, producers label their honey with a carbon isotope ratio score.
This score indicates the pureness of the honey. All-natural honey has a score that ranges low, from -23.5% to -33% (the lower the better).
Sugar - for reference - has a score in the high, -10% to -20% range.
This Jirisan Cherry Blossom Honey has a score of -23.5% - indicating a pure, all-natural honey!
- 100% all-natural honey harvested from Mt. Jirisan (Korea)
- Honey has a Carbon Isotope Ratio of -23.5% - which indicates pure, natural honey (no sugar added)
- Harvested once in the year - limited supply per year
- Two types to choose from: Snowbell Honey or Chestnut Honey
- Size is 400g - large bottle (will last long time)
1. Jirisan Snowbell Honey
Carbon Isotope Ratio: -23.5%
Every year, during May and June, Snowbell Trees in Mt Jirisan begin to blossom. The nectar from this flower tastes sweet - but not overly sweet - with a hint of floral aftertaste.
Drizzle this honey over fruit and yogurt or use it as a substitute for sugar in Korean recipes.
2. Jirisan Chestnut Honey
Carbon Isotope Ratio: -23.5%
Chestnut Trees also blossom during May and June. Nicknamed "Medicine Honey" by locals, this Chestnut honey is packed with vitamins - especially Potassium and Iron.
In terms of taste, it is not as sweet or floral like the Snowbell honey. Instead, it has a muted sweetness with a slight chestnut aftertaste!
We think it's great spreading over morning toast or baked goods!
