[Sigol Won] Maesil-Eck (Plum Extract Liquid)
Maesil Extract is an essential ingredient in Korean homecooking.
What is maesil? Maesil is the Korean term for green plums (also known as Mumes in English). It has been used throughout Korean history for its health benefits - like creating a stronger digestive system, promoting heart regularity and serving as an antibacterial agent.
Nowadays, it's most frequently used as a sugar substitute (or supplement) in Korean dishes. From salad dressings, meat marinades and dipping sauces, maesil adds a full-bodied sweetness with a touch of tartness. It can also be consumed straight - simply dilute the syrup with some water and a few ice cubes to make a refreshing iced tea.
So how is it made? Sigol Won packs equal parts maesil and sugar into an air-tight jar. It's left to sit for three months as the plum slowly releases its juices. Once the syrup is ready, the fruit is removed from the liquid. Then the syrup is aged for two years to develop a deeper flavor. Afterwards, its bottled and ready for sale.
The key taste variable is the quality of the plums. Sigol Won grows its high-quality maesil at the base of Mt Jirisan - where the climate is pure, clean and undisturbed. It's made exactly as described above and includes no preservatives or additional ingredients.

I've seen maesil as an ingredient in many recipes, but the only kind I could find was a plum-flavoured syrup, rather than one made from real plums. I'm happy now that I finally got the authentic stuff from Gochujar. And, to my surprise, I like it most when used as a base for iced tea!
Really nice. I tried the hongssangri brand last time and I think this one tastes just as delicious although it is maybe a little more runny. I find this one more convenient as I can get a large bottle and it‚Äôs more affordable. It adds a nice added depth of flavour to cooking where I might have otherwise used plain sugar and it‚Äôs my favourite to drink as a tea. As before it arrived quickly and well too. I will definitely buy it again.
